Macanese African Chicken | Creamy African Chicken

Hey Guys. Today we are in Macau and we will be  making the famous African Chicken. I know the   name is deceiving but this is a very famous dish  of Macau and it is one of those dishes that will   give a burst of flavours on your palette. It’s  creamy and it’s got a beautiful roasted taste   to it so let’s go in and see how we get that.  1st we will make a marinade for the chicken.   And for that we need a spice mix. So I have taken  1 1/4th tsp coriander seeds, 1 tsp fennel seeds,   1 tsp black peppercorns, ½ a nutmeg and 4  bay leaves and ground it to a fine powder. For the marinade we will take 3 shallots,  2 cloves of garlic, 1/2 an inch of ginger,   1 red chili, 2 tsps of paprika,  1 tsp of turmeric powder,   prepared spice mix and 1/4 tsp of lime  zest. Make sure to just grate the green   part and not the white part of the  lime.


So keep turning while grating. Now we will grind this to a fine paste. Now we will marinate the chicken  with this prepared paste.   So I have taken here 4 whole leg pieces  of chicken that's about 1 kg of chicken. Apart from the paste we will also  add 1/2 a tsp of lime or lemon juice,   2 tbsps of olive oil and some salt to taste.  Mix it all well with the chicken pieces. Once we are done mixing, we will cover  it and let this rest for atleast an hour. We'll move on to making our gravy  or curry, now for that will take 1/2   a medium sized onion, 2 small tomatoes,  2 cloves of garlic, 2 fresh red chillies   and 3 tbsps of peanut butter, I'm  using unsweetened peanut butter here.   And we will grind this to a fine paste  along with 3/4th cup of chicken stock.   We'll keep this aside and first we will fry the  chicken pieces. In a pan, add 1 tbsp of olive oil.   Once it is slightly hot, we will place our  marinated whole chicken leg pieces.


Now we will   fry this for 5 minutes on each side until they  are lightly brown and have light crispy exterior. We upload a yummy easy recipe every week  so please do subscribe to our channel   and click on the bell icon you don’t miss  out on the recipes that you might like. So I have cooked them for 2-3 minutes on each side  turning them twice in between and this is how they   look after a total of about 10 minutes. We're  not looking to cook them 100% we just want them   to be cooked probably about 70 to 80%. So you see  that brown bits and that crispy exterior, that's   what we're looking for. Take this out onto a plate  and will keep this aside while we make our curry. In the same pan or in another pan add 1tbsp of  olive oil.


Once it is slightly hot, we’ll add in   our prepared curry paste and cook it for 3 minutes  on medium high heat until it slightly thickens. If you are liking this recipe  of African Chicken from macau   then please do take a second, literally a  second to give a thumbs up to this video. Add some salt to taste in  between and continue cooking. Now after 3 minutes you can see  that it has thickened a bit.   At this stage we will add 2 tbsps of oyster sauce,   1 tsp of fish sauce, juice of  1/2 a lemon and 1 tsp of paprika.   We'll mix all of this nicely and cook for  another minute or two on medium high heat. Now to this we will add the marinade  in which we had marinated the chicken.   I have taken out the chicken pieces and this  is the remaining marinade that is in the bowl.   We’ll add this to our Curry, mix well and  cook for a minute on medium high heat.   After a minute we will add 120ML that is about 1/2  a cup of coconut milk, mix and cook on low heat   until the sauce gets to a coating consistency.  It may take anywhere between 15 to 20 minutes.

After 20 minutes you can see the color of the  Curry has darkened and it's also thickened. It's   got that coating consistency. Now to this we will  add 2 small potatoes cubed. Mix and cook this for   10 minutes on low heat. Again we are not looking  to cook the potatoes fully, maybe just 50%.   I am adding some salt to taste in  between and then continue cooking.


After 10 minutes you can see that the curry  has got a beautiful color, now to this we will   add 1 tbsp of fresh coriander, mix it well and  switch off the gas. That's the consistency that   we're looking to have. Now the final stage  of cooking we are going to do in the oven.   So in an oven proof dish, we will place our  chicken pieces along with all the juices. Then on top of that we will pour our prepared  Curry. Spread it around nicely to coat the   chicken and all the edges. We will now bake this  in a preheated oven for 30 minutes at 200 degrees   Celsius. Place an aluminum foil for the first  25 minutes, otherwise the top will get burnt.   Remove the foil for the last five minutes of  baking as we do want some roasting on top.   After 30 minutes, our African chicken is ready  to serve.


Just look at that beautiful colour it   has got and that roasting on top, that’s what  gives it the best flavor. It’s served with good   amount of either potato fries or potato wedges and  pickled cucumber is optional. The pickled cucumber   or jalapenos or gerkins add a  nice tangy taste to the dish.   As you can see this is a whole meal with  proteins, carbs and an amazing lasting taste.   Enjoy the African Chicken and we will see you  next week with another Asian recipe. i mean you guys can debate it amongst yourselves we already know so this is the stuff that goes along with the jell-o price we have some jollof rice here we have some bean stew here this is vegan friendly i'm a vegan um same with the jell-o fries as well stew maybe not so much so today i'm just going to have the jell-o fries plain and then tracy do you want to go into the snacks that we have sure let's see what we have here we have some yam chips peanut brittle and spicy sweet potato chips yes and all of these snacks here are made from mamalu's kitchen they make these snacks here in certainly we're gonna have um all the information about them how you can order yourself some in the description box yeah and i think we also forgot the plantain chips too oh disappointing a special favorite of mine i love plantain chips there's actually some coconut oh coconuts coconut things too so we have a wide variety of snacks here and they're very good from mamalu kitchen the bin chakra and the beans are from nifty street food they are a uk-based catering company but they're also based in sterling as well again or everything you need to know about them if you're looking to order of fufu so that's all for me because i love myself i'm the sierra leone that doesn't need food for yourself i've been eyeing that jollof rice for a while okay so let me let me pass it over to you and get some of the the stew itself with just the onions yeah i'm not one of the really strict ones where if there's like chicken in the food i won't eat it i just won't eat the chicken so i'm i'm not that guy but so i'm gonna grab some of this because i love jello fries and how how can i have this on the table and not have something and i am here on wrapping my fishy guys i'm starting with more of a heavy meal because it's the heaviest i would say normally i have my frisbee with my hand because i really don't care i'm an african woman but i've got long nails right now so that can't happen so that's the bean chakra so the bhitakara is fried and you said there's a little salt in there yeah so you grind the beans and then you have to like almost like beat it beat it beat it it add a tiny bit of salt some people do some people don't let you frying outside and so for me i get my protein through beans so i like because i you know i don't eat animals so i'm going to add some of this beanstalk no you don't eat animals we eat their food correct so are you starving them no definitely not that is what i'm feeling every vegan i'm like you're vegan but you're starving by eating that food incorrect there is so much vegetation on the planet for them to eat there's so much presentation on the planet for animals to eat there are many other arguments that are better than starving and the discussion for another day okay yes so there is this argument which i haven't been able to confirm or i guess deny is the idea that humans made the leap because of proteins that came from meat in terms of our being able our ability to like create fire do math these kinds of things language et cetera et cetera that's definitely a theory not necessarily fact because you don't know anything that happened thousands of years ago those are estimates or guesses but that argument i can maybe rock with a little bit but not the starving whatever anyway we're not starving animals but i want to get some of these plantain chips before we get i'm getting some of these i'm going to have the coconut the coconut it looks so good okay that's interesting kitchen coconut the way they close them up is actually really interesting too it keeps it nice and you know yeah it doesn't get cold so you like the food it's good it's so good like it's the salad salad is really nice one thing i like about salsa is that i feel like if you have a cold or anything like that it just really makes you you know get better faster so i really like it we all have decided to come here from different places i'm coming from the uk but i was born in germany i left here when i was five years old because of the war and i've come back and forth a few times but this is the first time i've come where i've come during rainy seasons and not holiday season okay and i'm having a completely different experience than i had before because like when i come during um holiday season is more of like just you know going out having fun not really experiencing the country right whereas this time i'm having a completely different experience how is it like being you know from you coming from america and then for me obviously coming from india you know so for me i've been coming to sierra leone since 2009 that was the first time i came as an adult and then coming again in 2017 but in both of those instances i came with family members my aunts and uncles or my parents and so they were deciding where we went and where we stayed and all those things when i first started coming in 2018 and i've been back i think six times since my experience has been a little bit different because now i get to control my experience so hanging out with friends staying at different places going to different events it's definitely kind of make time to get together so like yesterday we had a barbecue here yeah emma came to that yeah so that was cool it's good to get everybody together and hang out and then my group of friends what they do is on wednesdays they have a happy hour where they get together at a country laws really big hotels here that has a really nice view so they get together on wednesdays and have happy hours so that's been interesting and that's been a difference i would say between the two and then just the major differences between being in the us and in sierra leone i would say it's just the the lifestyle i feel more free here if i get pulled over by the police i don't fear being pulled over by the police right it's just a conversation whereas if it was in the u.s right i don't have to belabor the point but you guys know as a person of color being pulled over by the police you do fear that you will survive you have to comply to survive right is that is the advice that is given to you so that's something that's different also black excellence or people of color excellence where we're not minorities anymore we're the majority and for you tracy what was he about to learn specifically i made you like wanna come here from india well i moved here for work um and to be very honest just reflecting back on um what i was expecting i really didn't know what to expect when i moved here there isn't a lot of information out there about what uh it is like to live in syria especially if you're moving from another country so kudos to you guys actually for throwing some light on that but yeah when i moved here i was pleasantly surprised by all the parallels that i could draw between a life here and like back in india yeah and i think i've had this conversation with quite a few people here as well in terms of just like the energy the color the vibrance and even some of the chaos so i do feel quite at home when i'm here in sierra leone just in terms of all of those things so i've been to new delhi before oh you have i have yes i was there i've never been out there for ten days okay for a wedding and do you guys call those rickshaws okay yeah what do you got yeah so there's a similarity right exactly so i remember seeing those and being like i saw those in sierra leone so that's one of the major similarities right yes the rickshaws and we call kk i keep saying kk but it's k-e-h-k-e-h okay i'm working on my accent you're having the beans right now yes how do you like it i really like it yeah extremely flavorful again i feel like i keep i can't help but draw parallels of course the spices used are very different but it is still as flavorful as food would be back home and i like indian food i love indian food i used to eat chicken masala when i ate chicken broken juices are my favorite oh you do i love it it's like my favorite favorite rice i'm waiting to eat my jello fries right now because that's the i'm saving the best part for last period and um we didn't we didn't get a ton of jollof rice as you can see um when we ordered it i think we were expecting a little bit more yeah so i mean i don't want to take too much i'm waiting for mariama to get her portion but i had one bite and it's really good as i expected i mean what what else would you expect wow obviously yeah my costume is really really good but as you know it's quite heavy so i think i'm gonna take a break from eating this for a bit because there's quite a bit of bones in there as well so there's plenty of beans as you can see there's so much beans so the restaurant again who got the beans who gave us the beans in the rice so nifty street food nifty street food they are based in the uk and they also have branch not in syria nice serving size is nifty street food i know and i like taste so good very very good i had gone to an indian restaurant with a friend here in sierra leone okay and they serve this indian dish called biryani okay and the way i described it to the friend was essentially like it's it's it's the indian jollof rice how was the indian food here locally it's pretty good okay is it is it is it is it made by indians yes there is a pretty big indian community here in syria and again something i didn't know before i moved forward so i was again pleasantly surprised in some cases the families have been here for like a couple of generations oh wow exactly so quite interesting yeah i've definitely had indian food in ghana it was pretty good it was good so i do a home delivery vegan food service an indian lady actually makes it very good food because i know you guys have a lot of vegetarian options right so yes so it's a very good food what has it been like for you being vegan in africa yeah that's a great question it's been challenging to say the least very talented challenging everything is mostly you know like growing from the ground yeah because i don't i mean i don't think you realize when you're not immediate when you are a meat eater are you in your carnivore i guess you can say how much food meat goes into everything right and so when you go to a restaurant and ask them can you make this without chicken there's always a conversation like for sure and a lot of times two people use pig fat and like different things to make things for me it's probably limited what options i have so i tend to eat a lot of vegetable spring rolls that's been the main thing and the thing is that not only am i vegan but i tend to try to eat healthier you know there aren't as many non-fried options right so like yesterday there was a chinese restaurant that we went to it's not a sierra leone restaurant but they have steamed wontons right which is why i would prefer something steamed but they only had pork or beef i think right and so of course i would wanted the vegetable wontons steamed but they didn't happen it does limit what i can get and so like even as you can see like the bean chakra is fried right when i ask for food without meeting it there's always the like confusion like are you sure so you mean fish right okay fish and i'm like no i don't eat fish so like wait are you sure you don't want me and it's like a back and forth so that's really the issue what i would say too is the variety of fruits and vegetables are a little bit harder to come by and see early on you can get them they might be a little more expensive and you have to know where to go to get them but unlike in the west where you walk into a grocery store and there's a section for fruits and vegetables i don't know if it's like that in india yeah we do okay so here sometimes there stands outside or you have to go elsewhere to go find a local seller because they usually because there's not the best of refrigeration services usually those things are picked freshly the day before maybe two days before and then brought to town and then you have to buy from those people who are those vendors food is so good i can't even i can't it is really good for the conversation this is this is the thing it's challenging to eat and talk good guys i'm telling you like the food is so good the most sort of mainstream perspective that i had was unfortunately through the movie blood diamond and i don't think that is a good reference at all period oh my god but it's a good movie though it's a great movie yeah but if you're moving to sierra leone like that's not what you should be recognizing right right
