welcome to the prince eats here's a quick video for one pot north african chicken and potatoes full ingredients lists and step-by-step directions are located in the description and if you enjoyed this video please like comment subscribe and share let's jump right into it you'll need chicken stock salt and pepper chicken seasoning for this recipe i'm using mesa devita north african cooking sauce some of the ingredients include tomato paste which really is the base there's red bell pepper dates garlic and smoked paprika parsley and ginger it's supposed to give a north african flavor you'll need olive oil dry white wine is great but optional oil your pan opt for a pot or a pan with width and depth big enough to hold the chicken and potatoes you desire to prepare season your chicken and once the pot reaches medium high heat go ahead and add your chicken to the pan i'm using medium high heat because i'm going to crowd the pan normally i would advise against crowding the pan however i want to sear this chicken in one batch so i'm keeping it on medium high heat just so i can sustain some of that temperature when crowding the pan you lose heat which is counterproductive when you want to sear you'll still be able to get a good sear but it'll just take a little bit longer normally when i want a good sear i'll start the pan out on hot and then right before putting the chicken into the pan i'll reduce the heat to medium once the chicken is in the pan resist the urge to flip it too soon to get a good sear you really have to let the heat the pan and the oil do its job let the chicken sear for five to ten minutes afterwards flip the chicken and cook it on the other side for an additional three to five minutes don't worry about cooking the chicken all the way through it will finish cooking in the oven transfer the chicken to a clean plate leave the chicken renderings in the pan if you're using dry white wine this is the time to add it turn the heat on high turning the heat on high allows the alcohol in the wine to cook out sooner rather than later when the liquid reduces by half or the strong smell of alcohol dissipates it's ready for the next step use this time to scrape those chicken bits off the bottom of the pan don't get rid of them those chicken bits add flavor add your butter next add the sauce while still on high heat i let the tomato sauce cook in the middle of the pan and gradually incorporate it into the butter and wine sauce next add your potatoes and toss them gently in the sauce add your chicken stock don't let the liquid in the pan rise above half the depth of the pan as the potatoes and chicken cooks down the liquid in the pan will rise place the chicken on top of the potatoes bake in a preheated oven at 425 degrees for 45 minutes to one hour and just like that you're done the chicken comes out crispy on the skin the potatoes tender if you desire crispier skin for the chicken with about 10 minutes left in the baking process you can turn the temperature up to 450.
