#Maafe - Delicious Chicken Peanut Stew from West Africa! #africanfood #easyrecipe

um hi friends mafe is a West African stew that is way better than I could have ever expected it uses very common ingredients and was super simple to make I've seen it cooked many different ways but this is the method I came up with that took a little bit from several different recipes if mafe is something you eat or cook sometimes let me know how I did in the comments let's start cooking dice your onions here you'll want to cut your onions into these small pieces so they melt into the stew cut the potatoes and carrots into these bite-sized pieces chop the Green Chili Peppers into about one inch pieces if you don't like spice you can use green bell peppers instead here I'm using spicy green Moroccan Chili Peppers but if you're in the US you can use jalapenos or serrano peppers roughly chop some parsley or cilantro and put aside we'll use some in the dish and a little bit for garnish add 2 cups or 500 milliliters of chicken stock to a bowl with one cup or 250 milliliters of peanut butter and 2 tablespoons of tomato paste mix this and put aside heat up a pot and add oil Brown both sides of the chicken and remove from the pot add a little more oil and saute the onions until browned add the ginger garlic paste until raw smell is gone and go in with the potatoes carrots and green peppers once the veggies are slightly browned add the chicken back in along with the parsley or cilantro and the mixture of the broth peanut butter and tomato paste add salt to taste I used about a teaspoon and a half here bring up the heat cover and simmer for 45 minutes be sure to stir at least every five to ten minutes so the stew doesn't burn at the bottom of the pot while this Cooks cook some rice today we'll be using basmati rice but you can use Basmati Jasmine or any other you can remove the lid during the last five minutes of cooking if you'd like to thicken the stew a little more once it's done serve it on top of rice and garnish with parsley or cilantro and enjoy if you tried out this recipe let me know how it turned out in the comments I'd love to hear from you all be sure to like And subscribe so you don't miss out on my future videos as always take care my friends and I'll see you next time
